Sabroso Tomate Frito: A Taste of Spanish Delight

Ingredients:

  • 5 kg (11 lbs) ripe tomatoes
  • 3 large onions, finely chopped
  • 10 cloves of garlic, minced
  • 1/4 cup olive oil
  • 3 teaspoons sugar
  • 3 teaspoons salt (adjust to taste)
  • 2 teaspoons paprika (optional)
  • Freshly ground black pepper (to taste)
  • Fresh herbs (such as parsley or basil), chopped (optional)

Instructions:

  1. Bring a large pot of water to a boil. Score a small “X” on the bottom of each tomato. Drop the tomatoes into the boiling water and blanch them for about 30 seconds.
  2. Remove the tomatoes from the boiling water and transfer them to a bowl of ice water. Allow them to cool for a few minutes.
  3. Peel the skin off the tomatoes starting from the “X” mark. Cut the tomatoes in half and remove the seeds. Chop the tomatoes into small pieces.
  4. In a large saucepan or deep skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic to the pan. Sauté them until they become soft and translucent, about 5 minutes.
  5. Add the chopped tomatoes to the pan along with the sugar, salt, and paprika (if using). Stir well to combine all the ingredients.
  6. Reduce the heat to low and simmer the sauce uncovered for about 1 to 1.5 hours, stirring occasionally. This will allow the flavors to meld and the sauce to thicken.
  7. As the sauce cooks, the tomatoes will break down and release their juices, resulting in a thickened sauce. Continue simmering until you achieve the desired consistency.
  8. Taste the sauce and adjust the seasoning with salt and pepper according to your preference. If desired, you can add fresh herbs like parsley or basil for additional flavor.
  9. Once the Tomate Frito is ready, remove it from the heat and let it cool slightly.
  10. Serve the Tomate Frito as a sauce or base for various dishes. It can be used in pasta dishes, rice dishes, stews, as a topping for grilled meats or vegetables, or as a dipping sauce.
